The owner of a food truck that specializes in quesabirria is now opening a brick-and-mortar location in Houston. El Agave Cypress first started serving customers a variety of tacos, tortas, and quesadillas back in 2020. Now, owner Emmanuel Torres is working to remodel his first storefront at 6965 Barker Cypress Rd. in Houston.
The remodel at the space includes updates to the bar, the bathroom, and paint. They are also adding new commercial appliances. El Agave Cypress could open on Barker Cypress by the end of August, if all goes according to plan.
Torres had worked in car sales for 15 years before deciding to open El Agave Cypress as a food truck in 2020. “I went all in, and I’m here now. So, this is something new for me,” Torres said. “It’s gone exceptionally well.”
Torres plans to continue food truck operations at 29300 Hempstead Rd. in Cypress. “It’s something that I never thought I’d get to this fast but in less than two years, we’re opening up a brick-and-mortar.”
El Agave Cypress’ quesabirrias can be dipped into a broth with onion and cilantro. “They are very popular right now,” Torres told What Now Houston. El Agave Cypress’ menu also features tortas, tacos, quesadillas, and a baked potato topped with your choice of meat—fajita, chicken, pork, and birria. “We also have a birria pizza, which is a 16-inch flour tortilla with different meats cut up into slices like a pizza.”
You can also try elote, which is corn in a cup, a hot dog with all the fixings, or El Agave Cypress’ birria ramen soup. “We plan to expand now that we have a little bit more space.”
Torres hopes to build a relationship with the community through their delicious fare and free food giveaways during the holidays. “We like to be part of the community. We do events and do caterings. I’m proud to say that we’re going to employ at least a total of 10 new employees.”
