“My husband owns Just Falafel, which is located in Downtown Tunnel, and so this is kind of an expansion of the restaurant,” explained Heer Parikh, owner of Just Falafel Vegan Cafe. “I’ve been vegan for over 10 years now, so it’s always been my dream to open a restaurant.”

Parikh told What Now Houston that Just Falafel Vegan Cafe will cater to a variety of dietary needs and preferences. “It’s all vegan, but there is comfort food. There’s going to be oil-free options. There is going to be gluten-free, just different things because I want it to be also a health-conscious restaurant.” Parikh is still finalizing the menu.

“It’s going to also be very eco-conscious. My whole mission is around being earth-friendly, as well, so we’re going to do our best to be as earth-friendly as possible,” she said. That includes materials used inside the restaurant including packaging. Parikh wants to emphasize less waste. “We’re going to work hard to make it that way.”

Just Falafel Vegan Cafe will be located at 2111 W. Loop South, #100, Houston, TX 77027.
