Pastore Italian Kitchen to Now Open in Spring 2023

A new concept from Underbelly Hospitality is expected to open soon in Regent Square. Pastore Italian Kitchen is now set to open in the spring of 2023 to 1180 Dunlavy St.

Underbelly Hospitality first announced the new restaurant concept, Pastore, in late 2021 with executive chef Chris Davies, formerly of Uchi, leading the Italian-American menu. Davies has been at the helm of another of the hospitality group’s concepts, Wild Oats, since it opened last spring. Davies will be the opening chef at Pastore once it opens to the public, according to the Wild Oats website.

Pastore, which is Italian for Shepherd, will feature a variety of dishes. Davies is working on a higher-end menu that will include a rotating array of handmade pastas.

Inspired by a Tuscan color palette, Pastore will feature an upscale dining room and elegant garden patio, complete with fountains and lush greenery. “Guests can expect a dreamy Italian experience with every meal, and the type of place where you can keep your friends and family near, and your bellies full!” according to a press statement emailed to What Now Houston.

Pastore will join another Underbelly Hospitality concept at Regent Square—Georgia James.
