Harold Thomas, the visionary behind the popular food truck Krawfish 2 Geaux, is expanding his culinary empire with this brick-and-mortar venture, bringing the bold flavors of Cajun cuisine and the zest of Tex-Mex under one roof.

Thomas, known for serving what he boasts as the town’s unparalleled crawfish out of his bustling food truck, found inspiration in his limitations. The constraints of space within a mobile setup propelled him toward the conception of a more expansive, sit-down establishment. The Mardi Gras Cafe & Daiquiri Bar is not just an upscale boilhouse featuring a delectable array of seafood including oysters and snow crabs; it is a creative canvas where Thomas plans to blend the fiery spices of Louisiana with the robust tastes of Texas, offering a “Cajun and TexMex twist” to the delight of his future patrons.
Spanning 1,662 square feet, the space promises an ambiance that’s as vibrant and inviting as the menu. Thomas envisions the Mardi Gras Cafe & Daiquiri Bar as a destination where guests can indulge in an immersive dining experience, savoring dishes that tell a story of cultural fusion, complemented by an array of signature daiquiris that promise to refresh and invigorate.
The new boilhouse’s website and socials are currently being constructed as it is still in its infancy where its curious new patrons will be able to follow the new restaurant’s progress and gain insight into this Louisiana-Texas meshed journey they will soon be embarking upon.
At the latest, an opening timeframe is being aimed for the “beginning of Summer 2024,” Harold told What Now Houston.
