A Houston restaurant that has been serving Colombian dishes for the past 15 years is expanding its footprint. Mono’s Colombian Restaurant at 7330 Southwest Fwy., Ste. E in Houston will begin renovating a nearly 1,200-square-foot adjacent space, Ste. A2, to include a kitchen and to-go area.

Mono’s specializes in Colombian dishes including Bandeja Montanera or the Mountain Tray. “It’s a little bit of everything. It has rice, beans, sausage, steak, plantains, egg, what we call arepa, which is basically a small, corn patty, and a slice of avocado. And, also a pork belly,” said Alex Carmona, owner of Mono’s.

The menu also includes empanadas, made of natural yellow corn, soups, and chicken and rice. “For being a small kitchen, our menu is pretty big,” Carmona said.

“The additional kitchen space will relieve a little bit of waiting time currently in the restaurant,” Carmona told What Now Houston. By expanding the kitchen in the new space and separating catering and to-go orders from the main restaurant, it will hopefully cut down on the wait time for guests dining in the restaurant.

Mono’s also features a full bar. “Hopefully, we have some new customers who have never tried Colombian food that will give it a try,” Carmona said.

“We’re very excited. It’s been a long time that we’ve been working on this project, and I think it’s time. We definitely need the extra space.” They are waiting on permitting from the city, but Carmona hopes to have everything complete by the summer. “It all depends on how long approval for the permits take.”
