Known for his successful ventures with Covington Custom Builders and several local businesses, Covington is now setting his sights on reinventing the bar scene with his latest project: a uniquely conceived Bourbon Bar, to be located 3302 Mercer St.
Currently unnamed and in the early stages of development, the bar’s identity is beginning to take shape. Covington’s bar marks a significant departure from his speakeasy concept, which was the original thought when submitting the permit. The new venue pivots towards a brighter, more inviting atmosphere, featuring wine lockers and storage facilities. This bold move is designed to broaden its appeal and stand out in a competitive market. The goal is to create a space that’s welcoming to a wider audience.
In a strategic decision to focus exclusively on the drink experience, the bar will not feature a food menu or kitchen. However, Covington hints at potential future collaborations in the proximity provided a deal can be met to be the food supplier for his patrons come time. For now, the emphasis remains on curating an exceptional experience.
The bar’s operational hours are set to complement the city’s nightlife rhythm, opening no earlier than 5 pm and closing by midnight at the latest. These hours, however, are subject to fine-tuning as the concept continues to evolve.
