Chef Uditi’s signature “slow dough” is prepared with organic, stone-ground flour and ferments for two days resulting in a “light, easy-to-digest crust still sturdy enough to pick up with one hand,” according to the brand’s website.

The Pizzana menu features “neo-Neapolitan”-style pizzas, salads, antipasti, wood-fired vegetables, as well as seasonal specials. The dessert selection is developed by Candace Nelson and includes Sprinkles ice cream and Italian-inspired sweets such as caramel panna cotta. Wine and beer are also offered.ES

The planned Houston location could open sometime in the spring of 2023, according to a recent project filing. Some renovations will be required on the nearly 3,000-square-foot space at 2029 West Gray St. in Houston before Pizzana will open to the public. According to a recent Facebook post, Pizzana is currently in the hiring process for its location in Dallas, which will be the first for the Lone Star State.
