Dallas-Based GAP Concepts Enters the Houston F&B Scene with Culinary Destination that Pops with Multiple Hues of Pink at Every Turn

The hospitality team that has invigorated the Dallas dining scene rolled out the pink carpet in Houston for the opening of its rose-hued wonderland PostScript, a new dining experience that made its debut at Shops at Arrive River Oaks (2800 Kirby Dr., Suite A-132) on February 12, 2024. Veeral Rathod and Obi Ibeto of GAP Concepts, the hospitality group behind Dallas hotspots XOXO Dining Room, Lyla, and the upcoming Drai’s Dallas, will open the high-energy-meets-high-design PostScript with a modern American menu from chef Bryan Caswell.

The PostScript opening represents significant firsts: GAP Concept’s initial dip into Houston’s upscale dining and drinking scene as well as Caswell’s first high-profile return to a major restaurant project in his hometown. Both will play out against an elegant backdrop of the restaurant itself: an opulently designed space rich in color, flirtatious lighting, and a playful butterfly theme fluttering throughout the restaurant’s fuchsia exterior and blush-colored interiors.

“We aim for our guests to feel honored – a place where flavors, art, and community reimagines the essence of dining in Houston,” says Ibeto, co-owner in a statement. “Being surrounded by the bustling businesses, complemented by the prestigious shopping hub of Tootsies, adds a layer of richness to the experience we are thrilled to offer.”

Caswell, known to Houston diners for his trailblazing work at Reef, El Real Tex-Mex Cafe, and Jackson Street BBQ plans some unexpected, even daring, dishes within PostScript’s luxe menu. Caviar donuts with white chocolate crème fraîche, mustard brûlée short ribs, and Akaushi tomahawk ribeye are among the showstoppers on a menu that also includes indulgences such as raw and roasted oysters, shellfish tower, crispy rice sushi, chophouse classics, and throwback desserts like Baked Alaska and 11-layer chocolate cake.

Caswell’s signature dishes will be showcased within the restaurant’s distinctive, pink-colored design. Echoing the caterpillar-to-butterfly metamorphosis, PostScript is a dramatic transformation of the former Del Frisco’s Grille space – 9,300-square feet holding a bar and lounge, main dining room, private dining, and multiple patios.

“With PostScript, we wanted to create a sensory-expanding space bursting with color and dynamism in such a way as to beckon each guest to fully explore the confines and take in each and every meticulously crafted detail,” says Rathod, co-owner. “While certainly a calling card of the restaurant, the design is not the only element worth touting; Chef Caswell’s menu is one that perfectly complements PostScript’s striking interior space. He has truly outdone himself with this menu, one that Houstonians and visitors alike will find refreshing and authentic.”

As an added component of the interior’s striking panache, PostScript has partnered with international artist Romain Lefebvre AKA Punk Me Tender to create an exquisite pink exterior embellished with delicately hand-painted butterflies, and thematic wall art throughout. His artwork continues inside with installations on the bar, custom piano and wall art throughout the venue.

Entering through pink doors, guests are met by a cocktail lounge seating 75, dominated by a pink quartz-topped bar. The lounge’s “Princess Table” is a prime see-and-be-seen corner distinguished by oversize black and white photographs of Princess Grace of Monaco and Diana, Princess of Wales. The bar and lounge area, decorated with Punk Me Tender’s butterfly iconography, is the perfect spot for artisanal cocktails and selections from a thoughtful list of wine and bubbles. PostScript will introduce a happy hour, complete with a thoughtfully curated array of cocktails.

The main dining room has a centerpiece hand-painted grand piano and convenient Press for Champagne doorbells at each booth, ensuring a swift delivery of bubbles. Those seeking the most intimate of rendezvous are invited to acquaint themselves with PostScript’s private dining room that is outfitted with its own dedicated bar and patio; the private space can fit 42 guests for a sit-down dinner or 60 for reception style. Additionally, PostScript offers another private event room for a cozier affair, comfortably hosting 16 guests.

Open daily for dinner, the hours will be Monday through Sunday from 5:00 to 11:00 pm. PostScript will soon unveil lunch and brunch hours. Reservations will be available through the restaurant’s website and via Resy.
